The tapa prepared by Matiz, “Málaga style skewer with edible embers and tomato consommé”, was the winning entry in the Tribute to the Skewer Awards sponsored by Cervezas Victoria in the 2018 “Málaga de Tapeo” tapas circuit. And it’s no surprise that tapas in Málaga are quite a gastronomical experience.

Matiz’s tapa entry for this year’s tapas route, well-known for its market cuisine, was a skewer of presa ibérica (Iberian pork shoulder) on a bed of “edible embers” (black olives and squid ink), accompanied by a shot of seasoned tomato consommé, a combination of flavours the judges deemed worthy of honorary mention as the tapa with the best flavour, best presentation and greatest originality. This points to an auspicious evolution of market cuisine, and tapas in Málaga are the perfect example.

In addition to this top award, which is yet another incentive to do the tapa tango in Málaga, the jury awarded three additional special mentions. One went to KGB for the presentation of their “Triple sardine skewer with aioli and wood smoke”, another to La Taberna del Obispo for the flavour of their “Line-caught calamari skewer with toasted noodles and honey aioli”, and a third to Eboka for the originality of their “Chocolate and spirulina crêpe skewer on a bed of sand, with cava and seawater”.

32 establishments in Málaga, including some of the city’s top-rated restaurants, participated in the 2018 “Málaga de Tapeo” tapas route. Together they have paid tribute to the skewer in a bid to support the skewer’s candidacy to become Intangible Cultural Heritage.
